Clitoria ternatea is a perennial herbaceous plant native to Southeast Asia and some parts of the United States. It is a member of the Fabaceae family and closely resembles sweet peas and varietals grown for agricultural purposes. What sets this species apart is the high concentration of anthocyanins in its petals, these are water pigments found in plants. When this dried flower is introduced to base liquids it turns them a shocking blue hue, if you combine with the acidity of lemon, it becomes a royal purple.
Our butterfly pea powder is extracted from dried butterfly pea flowers using a water and heat process. After the maltodextrin is added the product is spray dried.
