Ulva lactuca is an edible green seaweed found in shallow, rocky, coastal shorelines around the world. The aqueous plant has thin, almost sheet-like, lobed and ruffled edges resembling a head of green leaf lettuce. Sea lettuce is typically added to culinary dishes for its nutritious value. Popular in Scotland, sea lettuce flakes are often added to soups and salads.
One of the most familiar of shallow saltwater seaweeds, sea lettuce is a favorite among manatees and humans alike and can even be used as an ingredient in ice cream. It is very high in iron, protein, iodine, manganese, and nickel. Sea lettuce is a member of the Ulvaceae family.
