Also known as Korean chili powder, gochugaru is a staple spice in Korean cuisine. It is most easily recognized as the flavor in bulgogi and kimchi,and is used liberally in many other dishes.
The word ‘gochu’ translates to chili pepper, while ‘garu’ translates to powder, so the name itself means chili powder. Gochugaru is made from dried peppers that are fully deseeded, and it considered to have a medium spice level.
This powder is a coarse grind with a somewhat sweet, smoky profile and is appreciated for the complex flavor it imparts more than the overwhelming heat of other chili powders. Most often used in BBQ dishes as a rub or marinade, try adding this spice to your blend the next time you prepare your protein.
